Questions home bakers ask us

Answered plainly, the way we'd talk to you at the counter.

I've never baked bread before. Can I really do this?

Yes. Every lesson is written in plain steps with real quantities, so you can follow along even if you've never opened a bag of flour. Start with the free course on sourdough starters, then move into sourdough when you're ready.

My loaves keep coming out flat. Will a course fix that?

Flat loaves usually come down to how the starter is kept, how the dough is shaped, or when it's scored. The courses cover sourdough, starters, and bread shaping and scoring step by step, so you can find where your bake is going wrong and put it right.

Which course should I start with?

If you've never kept a starter, begin with the free course that walks you through building your first one. From there, move into sourdough, enriched doughs, or shaping and scoring, in whatever order suits what you want to bake.

Do I need a stand mixer or any special equipment?

No. The lessons are written for a home kitchen, so you bake with what you likely already have: a mixing bowl, kitchen scales and an oven.

How do the written lessons work while I'm actually baking?

Each lesson is written so you can keep it open on the counter as you go, step beside step, rather than pausing to rewind a video with floury hands.

Can I work through the lessons in my own time?

Yes. The written lessons stay open and ready whenever you want to bake, so you can go at the pace that suits your kitchen and your week.

Is there a free way to try the school before I enrol?

Yes. The free course on starting your first sourdough starter lets you get a feel for the lessons before you join a paid course.

What does the free starter course cover?

It takes you through building your first sourdough starter from scratch, so you have something alive and ready to bake with before you commit to a course.

Who teaches the courses?

Ailsa Barr, founder and head baker, learned her craft over fifteen years at the ovens of a working bakery. Tomasz Nowak, pastry baker, teaches the enriched doughs.
